i think we should set you mini-challenges charlene.
I can make some things and I actually do enjoy cooking when doing it, but as Ali is often on shifts that get her in at 8/9pm and I hate cooking for one, I end up eating crap as well.
my favourite easy meals are macaroni cheese with homemade cheese sauce, homemade pizzas, omelettes, fajitas, cooked chicken and salads. stir frys.
i could do with some inspiration, so get posting recipes people!

ahhh... i do mine differently!
Stir milk, butter and cornflour until it starts to thicken then add grated cheese and english mustard with salt and pepper.
Add more cheese - the stronger the better.
Then pour into the drained macaroni and mix.

Ross' is the classic way. I add some fresh red pepper, put in dish grate more cheese on top and melt under the grill for a nice topping.
Charlene, one of the simplest things you can do is to cut up peppers, mushrooms, courgettes, shallots, beetroot, tomatoes into chunks. Toss in good olive oil and Balsamic vinegar. Add some sage leaves. Put in dish in oven 6-7 for at least 30 minutes. Beautiful roasted veg!
Cous cous is really quick and easy to make in a few minutes. It goes really well with the roasted veg.
My daughter-in-law puts the left-over veg with Philli (or any soft cheese) into crispy rolls which she heats in the oven.
If you have couscous left over just add some finely chopped veg for an instant salad.
Can you tell I always seem to cook too much. _________________ Regards,

Top tip - stick a tablespoon of Worcestershire Sauce in your mince - apparently this makes my mince and tatties better than Ian's mums.
I didn't take that as much of a compliment having tasted her grub, he just has low expectations |

Think I'll go for the mac & cheese with the mustard in the sauce for our tea tonight - sounds brill. Wish it was tea-time now. |

If you can go wrong here I will PMSL and I will never let you live it down.
Heres one a nice wee treat. Takes about 20 mins start to finish
1 frying pan, saucepan for Beansprouts, microwave for Rice
ingredients
Mushrooms, Onion , clove of garlic, Frying steak for 2, beansprouts, 2 pkts savoury rice, large carton of cream, salt and pepper and a knob of butter
Preparation:
slice frying steak into centimetre strips about 2 inches long and add a little salt, Slice mushrooms, chop an onion, .
Cooking:
Gently fry onions and mushrooms together in a little oil until onions are slightly soft then add steak and garlic and continue to fry gently for about 2 minutes then add full tub of cream and stir.
Start savoury rice in Micro wave as per intructions approx 3 minutes.
Melt butter in a saucepan and add Beansprouts and stir gently to cook for the same time as rice.
Remember to stir steak cream onions etc
Open rice and dish, pour over steak onions and mushrooms cream and garlic sauce, put beansprouts to the top.
